This quick and easy recipe makes a great change from a traditional salad, and is a tasty way of increasing your veg quota for the day.
Ingredients:
4 large cos lettuce leaves1 medium avocado2 chicken breasts, cooked & shredded6 grape tomatoes, quartered½ red capsicum, diced1 tsp lemon/lime juice¼ tsp onion powder¼ tsp garlic powder1 Tbsp pumpkin seeds, to serveMash avocado flesh in a bowl until smooth. Add juice, garlic, onion and a pinch of salt, and combine.
Stir in chicken, tomatoes and bell pepper, and coat evenly.
Serve directly into lettuce leaves and sprinkle with pumpkin seeds.
