Healthy Ramen Bowl(Serves 1)
Ingredients:
50g brown rice noodles2 cups vegetable broth3 garlic cloves, minced1 carrot, sliced6 mushrooms, sliced½ tsp chilli powder1 Tbsp lime juice2 eggs, soft-boiled1 Tbsp fresh coriander, chopped
Method:
Combine vegetable broth, garlic and noodles in a large saucepan on medium-high heat.
Add carrot, mushroom, chilli and lime juice, and cook for a few minutes, or until noodles soften.
Serve topped with soft boiled eggs and coriander.
Optional: Switch noodles for zucchini, buckwheat or legume noodles
